A couple more days until the Food Buzz Fest in San Francisco. I haven’t been able to think about anything else but food.
How about a great filling food like Apples. Apples are among the most versatile fruit. I just love apples. LOVE apples. Did I mention how much I love apples?
Just think of all the possibilities, apple butter, apple pancakes, apple cider… the list goes on and on.
The natural sweetness in an apple can go a long way. There are so many varieties too.
Today I am going to use a Granny Smith apple because I love the tartness that you get.
Combine that with a little honey and you have a healthy snack or appetizer for your next party.
I managed to cut the apple into 12 slices.
Ingredients
1 WHOLE apple is 3 PP
1 ounce crumbled goat cheese
1/2 tablespoon honey
1 large apple, cored and cut into thin slices
micro green leaves
Freshly ground black pepper
Directions
Spread about 1/2 teaspoon of the mixture onto each apple slice and top with micro greens and gorgonzola.
Arrange the slices on a platter and sprinkle with black pepper.
Enjoy.
What a great combination of flavors. I gobbled mine up so fast that I reached for another slice but they were all gone.
